Ascolana tenera monocultivar oil is obtained exclusively from one variety of olive. The product obtained is a subtle oil, with a peculiar taste presenting cut grass, artichoke, almond and, most importantly, tomatoe flavours. This is its distinctive hallmark characterizing this variety. Medium fruitiness, bright green colour, tending to yellow, strong picancy and a nice bitterness.
